Penne with vegetables, safron and burrata

Ingredients

250 g
40 g
courgettes
30 g
aubergine
20 g
bell peppers
1 sachet
saffron
as desired
basil
4
cherry tomatoes
50 g
Burrata (fresh Italian cheese – a special kind of Mozzarella)
as desired
pepper
1
garlic clove
as desired
extra virgin olive oil

Preparation

Cook the Schär Penne in salted boiling water for around 7 minutes.

 

Clean and finely dice the vegetables.

 

Heat a non-stick frying pan with a drizzle of oil and the unpeeled garlic. Add the diced vegetables, cherry tomatoes and basil and cook for 2-3 minutes.

 

Add the Schär Penne and a couple of ladlefuls of cooking water and cook gently for a further 2 - 3 minutes. Finish by stirring in the ground saffron, a grating of pepper and parmesan to taste and mix well.

 

Serve by scattering a few drops of burrata over the Schär Penne.

 

Chef's tip: Excellent served with a little grated lemon zest.
