Ingredients

Preparation

Beat the egg yolks and sugar in a bowl.

 

Beat the egg whites in a separate bowl.

 

Fold the egg yolks and sugar in to the egg whites using a spatula, being careful that the egg whites do not collapse.

 

Fold in the mascarpone until the mixture is soft and frothy,

 

then mix in a pinch of cocoa.

 

Leave the mixture to chill in the fridge, and begin dipping the Schär Savoiardi ladyfingers in to the lukewarm coffee (prepared previously).

 

Assemble the tiramisù in a glass: pour a little mascarpone cream on to the bottom, and add a ladyfinger cut in half lengthways and soaked in the coffee. Top with another layer of mascarpone and another ladyfinger, and garnish with a dusting of cocoa.

 

Refrigerate the desserts for around 1 hour before serving.

 

Chef's tip:

 

Do not oversoak the ladyfingers in the coffee, as this could cause them to lose their consistency.
